Giving Thanks Yoga Style

Let us celebrate the gifts we receive every day by mother earth this year on Thanksgiving.  Yoga encourages us to practice non-violence (Ahimsa) towards ourselves and all beings.  Philosophically it makes sense to follow a vegetarian or vegan diet.  Please share with us your favorite vegetarian or vegan recipes here on this blog. 

Here is one of my favorite Ayurvedic Dishes

Sweet Potato Soup

serves 4

Boil 4  clean sweet potatoes for 45 minutes in water.  add fresh ginger or dry ginger powder to the cooking water.

Drain the potatoes and save 2 cups of the cooking water. 

Peel potatoes and place with water in blender.  Add Silk unsweetened Soy milk 1-2 cups until desired consistency while blending it all together.  Add Marple syrup for sweetness if needed.

voila, great boost of protein and B vitamins AND balancing for all doshas (body types in Ayurveda), which means it is easily digested and sits well for all of us.

    Great, thanks. I have been trying to give up meat. I do not know how to make all these grains and Tofu and all that, and never cooked sweet potato myslelf. I do like the mashed sweet potatoes at Whole Foods. How can I make them myself?

    congratulations paul! i like using GHEE, clarified butter in my potatoes. in AYURVEDA it is considered a sacred, most healing food. i warm the ghee up in a small pan (use very little ghee) and infuse it with spices. cumin, tumeric, fennel seeds, ginger, whatever i want that day and then add it to the potatoes and mash it all with a fork. cook the potatoes 35-45 min, sticking a fork in from time to time to check if the center is soft…i am sure there are many ways to make mashed potatoes, i like it simple. hope that you enjoy.
